To Warm The Tummy...

...and the soul on an icy Winter's day. Soup. Is there anything better? We all love Tomato soup and this is pretty easy AND good. 1 (14-ounce) can chopped tomatoes 3/4 cup extra virgin olive oil Salt and freshly ground black pepper 1 stalk celery, diced 1 small carrot, diced 1 yellow onion, diced 2 cloves garlic, minced 1 cup chicken broth 1 bay leaf 2 tablespoons butter 1/4 cup chopped fresh basil leaves 1/2 cup heavy cream, optionalPreheat oven to 450 degrees F.

Strain the chopped canned tomatoes, reserving the juices, and spread onto a baking sheet, season with salt and pepper, to taste, drizzle with 1/4 cup of the olive oil and roast until caramelized, about 15 minutes.

Meanwhile, in a saucepan, heat remaining olive oil over medium-low heat. Add the celery, carrot, onion and garlic, cook until softened, about 10 minutes. Add the roasted chopped canned tomatoes, reserved tomato juices, chicken broth, bay leaf and butter. Simmer until vegetables are very tender, about 15 to 20 minutes. Add basil and cream, if using. Puree with a hand held immersion blender until smooth.

Great recipe, SusieQ. I don't like fresh tomatoes but I love tomato soup. I'll have to try this real soon.

I've never been a fan of tomato soup, but the roasting of the canned tomatoes intrigues me. I love all roasted veggies..yum :)

I was an odd kid - I never had tomato soup until I got married, and my husband was also a fan of the grilled-cheese-dunking. This recipe sounds yummy!

Hi Sue, we agree with the girls above, nothing better than tomato soup and a melted cheese sandwich! The roasting of the tomato sounds great, it would make the flavour more intense I guess, must try that, thanks for this recipe!! Jenn and Jacqui

Until recently I worked with a young woman - who had to work overtime with me - and I called out to order in food.

She said "NO TOMATO on my sandwich please. I hate tomato."

"Okay!"

Then I told her a cup of soup came with the order - "What do you want?"

Her answer: "Tomato"

I tell ya, I peered over my bifocals at her - speechless.

Then she looked back at me and squinched. "Whaaaat?"

SusieQ- You should call this "Not Your Mother's Tomato Soup" because it is sooooo not like Campbell's! I made this last night and everyone keept asking if there was more! It was delicious! I will have to make double next time, thanks for sharing!

I add a little red pepper(for zip!) and used italian spice mix for the fresh basil(market was out) because my crew likes "big" flavor but this is definitely a keeper! Have a warm & toasty weekend!

Hi Sue, this sounds great! I love tomato soup but prefer to cook from scratch so I can control calories & carbs. I have never seen a scratch tomato soup recipe and can't wait to try this:>P
