Late September Sunshine

One of our favorite spots to visit, in any season, is Cox Arboretum, part of the Dayton, Ohio Metro Parks system.
But I do so love to visit in the Fall when the air feels crisp and the sky is clear.
Each year, in late September, the Kettering Hospital Garlic Festival is held on the Arboretum's grounds. It's always a fun way to spend a day. The air is heavy with the wonderful smells of garlic cooking in oh so many ways. There are craft booths filled with all manner of treasures, children's activities and, of course, the park is the perfect place to walk and enjoy nature. Bill, Grace, Grace's buddy Erin and I spent a few sweet hours here, walking, nibbling, people watching and listening to some great bands. The perfect way to say goodbye to September and hello to Autumn.

Paul Newman, Hollywood's anti-hero, dies at 83 By JOHN CHRISTOFFERSEN, Associated Press Writer
WESTPORT, Conn. - Paul Newman never much cared for what he once called the "rubbish" of Hollywood, choosing to live in a quiet community on the opposite corner of the U.S. map, staying with his wife of many years and — long after he became bored with acting — pursuing his dual passions of philanthropy and race cars. And yet despite enormous success in both endeavors and a vile distaste for celebrity, the Oscar-winning actor never lost the aura of a towering Hollywood movie star, turning in roles later in life that carried all the blue-eyed, heartthrob cool of his anti-hero performances in "Hud," "Cool Hand Luke" and "Butch Cassidy and the Sundance Kid." The 10-time Academy Award nominee died Friday at age 83, surrounded by family and close friends at his Westport farmhouse following a long battle with cancer, publicist Jeff Sanderson said Saturday. In May, Newman dropped plans to direct a fall production of "Of Mice and Men" at Connecticut's Westport Country Playhouse, citing unspecified health issues. The following month, a friend disclosed that he was being treated for cancer and Martha Stewart, also a friend, posted photos on her Web site of Newman looking gaunt at a charity luncheon. But true to his fiercely private nature, Newman remained cagey about his condition, reacting to reports that he had lung cancer with a statement saying only that he was "doing nicely." As an actor, Newman got his start in theater and on television during the 1950s, and went on to become a legend held in awe by his peers. He won one Oscar and took home two honorary ones, and had major roles in more than 50 motion pictures, including "Exodus," "Butch Cassidy," "The Verdict," "The Sting" and "Absence of Malice." Newman worked with some of the greatest directors of the past half century, from Alfred Hitchcock and John Huston to Robert Altman, Martin Scorsese and the Coen brothers. His co-stars included Elizabeth Taylor, Lauren Bacall, Tom Cruise, Tom Hanks and, most famously, Robert Redford, his sidekick in "Butch Cassidy" and "The Sting." "There is a point where feelings go beyond words," Redford said Saturday. "I have lost a real friend. My life — and this country — is better for his being in it." Newman sometimes teamed with his wife and fellow Oscar winner, Joanne Woodward, with whom he had one of Hollywood's rare long-term marriages. "I have steak at home, why go out for hamburger?" Newman told Playboy magazine when asked if he was tempted to stray. They wed in 1958, around the same time they both appeared in "The Long Hot Summer." Newman also directed her in several films, including "Rachel, Rachel" and "The Glass Menagerie." "Our father was a rare symbol of selfless humility, the last to acknowledge what he was doing was special," his daughters said in a written statement. "Intensely private, he quietly succeeded beyond measure in impacting the lives of so many with his generosity." With his strong, classically handsome face and piercing blue eyes, Newman was just as likely to play against his looks, becoming a favorite with critics for his convincing portrayals of rebels, tough guys and losers. New York Times critic Caryn James wrote after his turn as the town curmudgeon in 1995's "Nobody's Fool" that "you never stop to wonder how a guy as good-looking as Paul Newman ended up this way." But neither his heartthrob looks nor his talent could convince Newman to embrace the Hollywood lifestyle. He was reluctant to give interviews and usually refused to sign autographs because he found the majesty of the act offensive. "Sometimes God makes perfect people," fellow "Absence of Malice" star Sally Field said, "and Paul Newman was one of them." Newman had a soft spot for underdogs in real life, giving tens of millions to charities through his food company and setting up camps for severely ill children. Passionately opposed to the Vietnam War, and in favor of civil rights, he was so famously liberal that he ended up on President Nixon's "enemies list," one of the actor's proudest achievements, he liked to say. A screen legend by his mid-40s, he waited a long time for his first competitive Oscar, winning in 1987 for "The Color of Money," a reprise of the role of pool shark "Fast Eddie" Felson, whom Newman portrayed in the 1961 film "The Hustler." In that film, Newman delivered a magnetic performance as the smooth-talking, whiskey-chugging pool shark who takes on Minnesota Fats — played by Jackie Gleason — and becomes entangled with a gambler played by George C. Scott. In the sequel — directed by Scorsese — "Fast Eddie" is no longer the high-stakes hustler he once was, but an aging liquor salesman who takes a young pool player (Cruise) under his wing before making a comeback. He won an honorary Oscar in 1986 "in recognition of his many and memorable compelling screen performances and for his personal integrity and dedication to his craft." In 1994, he won a third Oscar, the Jean Hersholt Humanitarian Award, for his charitable work. His most recent academy nod was a supporting actor nomination for the 2002 film "Road to Perdition." One of Newman's nominations was as a producer; the other nine were in acting categories. (Jack Nicholson holds the record among actors for Oscar nominations, with 12; actress Meryl Streep has had 14.) As he passed his 80th birthday, he remained in demand, winning an Emmy and a Golden Globe for the 2005 HBO drama "Empire Falls" and providing the voice of a crusty 1951 Hudson Hornet in the 2006 Disney-Pixar hit, "Cars." But in May 2007, he told ABC's "Good Morning America" he had given up acting, though he intended to remain active in charity projects. "I'm not able to work anymore as an actor at the level I would want to," he said. "You start to lose your memory, your confidence, your invention. So that's pretty much a closed book for me." Newman also turned to producing and directing. In 1968, he directed "Rachel, Rachel," a film about a lonely spinster's rebirth. The movie received four Oscar nominations, including Newman, for producer of a best motion picture, and Woodward, for best actress. The film earned Newman the best director award from the New York Film Critics Circle. In the 1970s, Newman, admittedly bored with acting, became fascinated with auto racing, a sport he studied when he starred in the 1969 film, "Winning." After turning professional in 1977, Newman and his driving team made strong showings in several major races, including fifth place in Daytona in 1977 and second place in the Le Mans in 1979. "Racing is the best way I know to get away from all the rubbish of Hollywood," he told People magazine in 1979. Newman later became a car owner and formed a partnership with Carl Haas, starting Newman/Haas Racing in 1983 and joining the CART series. Hiring Mario Andretti as its first driver, the team was an instant success, and throughout the last 26 years, the team — now known as Newman/Haas/Lanigan and part of the IndyCar Series — has won 107 races and eight series championships. "Paul and I have been partners for 26 years and I have come to know his passion, humor and, above all, his generosity," Haas said. "Not just economic generosity, but generosity of spirit. His support of the team's drivers, crew and the racing industry is legendary. His pure joy at winning a pole position or winning a race exemplified the spirit he brought to his life and to all those that knew him." Despite his love of race cars, Newman continued to make movies and continued to pile up Oscar nominations, his looks remarkably intact, his acting becoming more subtle, nothing like the mannered method performances of his early years, when he was sometimes dismissed as a Brando imitator. Off the screen, Newman was beloved in Westport, the upscale community about an hour north of New York. One of his favorite haunts was Mario's Place, an eatery that Newman frequented with pals actor James Naughton or writer A.E. Hotchner. He preferred medium-rare hamburgers, with an occasional Heineken. "He's such a great human being," owner Frank DeMace said. "I can't say enough about him." Former patrolman John Anastasia says Newman regularly played the annual softball game between local celebrities and the town police department. Newman played on the police department's team. "He was very much into it, very athletic," Anastasia said. "He didn't play the part of a celebrity, he played the part of a ballplayer. He was not just there for his good looks." In 1982, Newman and Hotchner started a company to market Newman's original oil-and-vinegar dressing. Newman's Own, which began as a joke, grew into a multimillion-dollar business selling popcorn, salad dressing, spaghetti sauce and other foods. All of the company's profits are donated to charities. The company had donated more than $250 million, according to its Web site. "We will miss our friend Paul Newman, but are lucky ourselves to have known such a remarkable person," Robert Forrester, vice chairman of Newman's Own Foundation, said in a statement. Hotchner said Newman should have "everybody's admiration." "For me it's the loss of an adventurous friendship over the past 50 years and it's the loss of a great American citizen," Hotchner said. In 1988, Newman founded a camp in northeastern Connecticut for children with cancer and other life-threatening diseases. He went on to establish similar camps in several other states and in Europe. He and Woodward bought an 18th century farmhouse in Westport, where they raised their three daughters, Elinor "Nell," Melissa and Clea. Newman had two daughters, Susan and Stephanie, and a son, Scott, from a previous marriage to Jacqueline Witte. Scott died in 1978 of an accidental overdose of alcohol and Valium. After his only son's death, Newman established the Scott Newman Foundation to finance the production of anti-drug films for children. Newman was born in Cleveland, the second of two boys of Arthur S. Newman, a partner in a sporting goods store, and Theresa Fetzer Newman. Following World War II service in the Navy, he enrolled at Kenyon College in Gambier, Ohio, where he got a degree in English and was active in student productions. He later studied at Yale University's School of Drama, then headed to work in theater and television in New York, where his classmates at the famed Actor's Studio included Brando, James Dean and Karl Malden. Newman's breakthrough was enabled by tragedy: Dean, scheduled to star as the disfigured boxer in a television adaptation of Ernest Hemingway's "The Battler," died in a car crash in 1955. His role was taken by Newman, then a little-known performer. Newman started in movies the year before, in "The Silver Chalice," a costume film he so despised that he took out an ad in Variety to apologize. By 1958, he had won the best actor award at the Cannes Film Festival for the shiftless Ben Quick in "The Long Hot Summer." In December 1994, about a month before his 70th birthday, he told Newsweek magazine he had changed little with age. "I'm not mellower, I'm not less angry, I'm not less self-critical, I'm not less tenacious," he said. "Maybe the best part is that your liver can't handle those beers at noon anymore," he said. Newman is survived by his wife, five children, two grandsons and his older brother Arthur. Paul On Paul: The light that you think you emanate is not necessarily the light that other people see. How the Newmans made Westport their own BY GREGORY KATZ, Associated Press Writer Sat Sep 27, 2:26 PM ET WESTPORT, Conn. - When I was a kid, I never understood why my older sister got so giddy whenever we saw this middle-aged guy in tight jeans and a white T-shirt zipping around town on a bright blue motorcycle. It was only Paul Newman. So what? Only later did I realize that not every small town has a bona fide movie star so tightly woven into the fabric of daily life. It's almost impossible to imagine this small Connecticut town on the Long Island Sound now that he is gone. "He was always at ease in the town, not pretentious," said Westport News columnist and high school soccer coach Dan Woog. "He stayed in the town for 50 years and became part of the community without imposing himself or being overwhelming. When he'd speak to school classes, it was as a father, not as Butch Cassidy." Newman died at his home Friday surrounded by his family and close friends, his publicist said. We used to see the actor buying apple cider at the farm stands in the fall. He came to our high school, at the height of the psychedelic era, to lecture us on the dangers of drug and alcohol abuse, a cause he embraced even before the traumatic loss of his only son to an accidental overdose. As he aged and stepped back from the demands of making film after film, he and his wife, the actress Joanne Woodward, helped revitalize the endangered Westport Country Playhouse and also aided with the construction of a new library, a treasured town resource. They loaned their star power to local causes large and small, with Newman often vending popcorn at charity events. In exchange, they received something quite precious — near total privacy, far from the glaring lights of Hollywood and New York. "People were very proud that he was here, but they really respected his personal life," said Mollie Donovan, a Westport Historical Society leader who worked with Newman and Woodward on a variety of projects. "We never got in his face. Even if they hadn't been stars, you would have been happy to have them as friends — such warm people." She said Newman and Woodward showed their affection for Westport in a variety of ways, from helping establish a permanent art collection for the town schools to donating land to preserve open spaces here. Newman also acted in and directed local dramas and sometimes read stories to children at the library. "That tells you how he felt about Westport," she said. Donovan remembers an occasion several years back when Newman and Woodward opened the renovated barn where they lived to the public for a charity fundraiser. The house was just like any other in town — except for the Emmys and Oscars on discreet display on a little shelf with other family knick-knacks. "I'll never forget that," Donovan said. Rumors about Newman's fading health swirled throughout Westport this summer, but Donovan and others said they shied away from asking Woodward about her husband's fight against cancer because she didn't want to violate their privacy. Those who had seen Newman said he appeared painfully thin and frail. Everyone in town knew where Newman and Woodward lived in the woods near Coleytown school, but no security perimeter was established because none was needed. No one ventured in without an invitation. The only exception, Woodward told me when we had a working lunch two years ago to discuss her work at the Playhouse, came during what she jokingly referred to as her husband's "international sex symbol phase." Those were the high-profile days when Newman was central to several smash hits, including his partnerships with pal Robert Redford for "The Sting" and "Butch Cassidy and the Sundance Kid." Back then, Woodward said, curious female fans would sometimes cruise up to the house hoping to catch a glimpse of the star, only to be chased away by the couple's children and their false-fierce Irish wolfhound. I only interviewed Newman once. He was distant until I asked about the way the town had changed, how the precious old orchards had been bulldozed to make way for condos and car dealerships. Then the famous blue eyes flashed with anger. Woodward told me they moved to Westport — spending $96,000 in 1960 for a house and two barns that are worth millions today — for the same reason that drew so many to the suburbs during the Eisenhower and Kennedy eras: they were looking for a quiet place to raise their kids. They avoided the flashy and the opulent, settling in a peaceful, bucolic part of town deep in the forest rather than buying one of the Gold Coast estates favored by corporate chieftains and entertainment moguls. When Newman and Woodward moved in, Westport was still known as something of a writers and artists retreat. During his lifetime it would become a wealthy town popular with investment bankers and financiers — a transformation symbolized by the changing face of Main Street, where Bill's Smoke Shop shut down and Tiffany & Co. opened up. Newman and Woodward chose to live far from Hollywood, where their scintillating romance had generated far more coverage than they wanted, especially since Newman was married to another woman when they met. Since then, the gossip ceased because there was nothing to gossip about — no boozy confrontations, no reports of secret lovers, no financial scandals. Just a conventional, rock-solid marriage. Woodward even supported, a bit reluctantly, Newman's late-in-life embrace of auto racing, though she did suggest he slow down, literally, when he passed 80. In a town that is now marked by conspicuous consumption — matching his-and-her Mercedes are common — Newman and Woodward chose to downplay their financial success, although he did sometimes fly home by helicopter, landing in the open school grounds near his house before flight regulations made that more difficult. Woodward told me she was appalled by the huge houses sprouting throughout the town as cookie-cutter "McMansions" replaced the aging, colonial-style homes she treasured. She said she wanted to buy up a nearby house several years ago to prevent it from being demolished, but was overruled by her husband, who felt it was too pricey. "I think like everybody else they remembered the town as it was, the mom-and-pop stores that are gone now, and they recognized it wasn't the same," said Woog. "But even as it changed something kept them here, they still thought it was a special place."

Foodies Unite!

As a Navy couple, we have been able to dine on the foods of many lands and yet, there are always some things that I have yet to taste, some exotic cuisine that would surely delight my palate! Hm...or, perhaps there are some things that I should bypass altogether. Either way, I recently found this list on a friend's blog and thought it would be fun to play along. Now you all know how much I *hate* a list. Um, okay, so I actually, sort of, kinda like 'em. OKAY I LOVE 'em but this should be something a little different! Let's begin...

September 2004...Bill and I were in China and it was there, in Chongqing, that we became the parents of a little girl...a shy, frightened,
sad little girl. A stoic child, constantly on the verge of tears, who spoke no English and had never seen a television, an escalator, a McDonald's or a Caucasian. She had arrived in Chongqing, from her rural orphanage, after a 5 hour bus ride. She was exhausted, hungry and scared to death.
We signed the papers in a hot, stuffy, crowded office, the papers that would legally make her our child. While we took care of these very important matters, this small soul sat in a, much too large for her small frame, chair, her body shaking almost uncontrollably. She would not allow us to hug her, hold her hand or touch her in anyway, accepting no comfort, no
affection. Yes, we had chosen this 6 year old angel to be a part of our lives but she had not agreed to this arrangement. It was out of her hands. Her life was taking a dramatic turn and she had no say about it at all.
September 2008...she races back up to her room, the shrine to all things pink and fluffy and Hannah Montana, to grab her jacket. The pink one of course. She stops to hug our cat Henry, then runs back down the steps, breathless with anticipation. "Mom? What time is Kelly coming?" I assure her that Kelly will be here by 6 PM for the long awaited sleep over. Ah, a teacher's in service day is always a cause for delight! No school tomorrow means a long night of giggling and movies and Jonas Brother songs.
As we sat on the stairs this morning, I rubbed her back and listened to the non stop chatter about gym class, which boy was the silliest, Halloween costumes and
ice cream. "There's my bus Mom!" and she flew out the door and bounded down the porch
steps. She stopped, turned and grinned. "I forgot!", she shouted and ran back up to give me a big squeeze. "See ya latah baked potatah!" and she was off again. "I love you...see you after school..."
4 years ago was our "Gotcha Day". The day we could finally say she was ours and we were hers. "Gotcha. Now and forever."

20 Little Things About Fall

~Now, what are my 20 Favorite Things About Autumn?
Where do I begin? From the first day of Fall, until the week after Thanksgiving, I am in high spirits. This is my favorite time of the year. I look forward to these days with the anticipation of a child waiting for Santa's yearly visit.
1. The darkness comes sooner now and, while some seem sad about it, I rejoice! It's time to move inside and get cozy. The sky turns that soft, misty purple and the sun fades early. Turn on all those sweet lamps and light the pumpkin butter candles. The house just glows...
2. Crisp Autumn apples. That sweet, juicy crunch as you take your first bite.

3. Chrysanthemums

Delicate flowers and beautiful colors...pots of these lovely plants on the porch or taking up residence in neighborhood gardens. Their cheery, seasonal splendor is a long awaited treat.

4. Pulling out the brown transferware. Okay, so I never actually out it *all* away but this is the season where I can go all out and let it take center stage! On the mantel, on the table...oh how I love it!

5. The changing leaves. Nothing quickens my heartbeat more (Well, except Brian Dennehy but that goes without saying right?) than seeing that first orange tinged leaf. The reds, oranges, golds set against a azure blue sky....magical! Or even in the Autumn drizzle. Their beauty is truly the work of God's own perfect watercolor brush.

6. Decorating for the changing season is a joy for me. Our house is often a mish mash of all the things I adore about the Fall, along with the blessed holiday of Thanksgiving and the fun of Halloween. I try to use seasonal things like corn, pumpkins, leaves and vines and then add a few turkeys and some Halloween silliness tossed in for good measure.

7. Halloween. I love the smiles and laughter of children as they approach the front door. "Trick or Treat" they shout and, almost always, they go away with a grin and a thank you on their lips.

I especially love the tiny ones, often sporting a mask that is ever so slightly askew, as they struggle to climb the last step. That iconic phrase is often turned around and comes out, "Tweet or Twick" and doesn't that just melt my heart!

And I love carving the Jack O Lantern. See? I am really just a big kid at heart. A. Very. Big. Kid.

8. Thanksgiving. This is my favorite holiday. It is such a special day, a day to truly slow down, be with those you love and thank God for all we have been given. It is also a day to share with others, those who may be hurting, the bounty in our lives. It is a day that brings me peace and warms my heart.

And I love the Macy's Parade and cornbread stuffing too!

9. A warm fire...'nuff said.

10. Hot mulled cider. We do ours in our Crock Pot and it just tastes like home.

1/2 c. brown sugar

1 tsp. whole allspice

1 tsp. whole cloves1/4 tsp. salt

Dash of ground nutmeg

3 inches stick cinnamon

2 qt. apple juice

Orange slices Mix all ingredients together. Heat and serve in your crock pot or cooking pot.

11. Evening, after dinner, walks with Bill...okay. So we can walk anytime but it is especially wonderful when darkness settles in early, the neighbor's windows shine brightly and the air has a bit of a chill.

I really look forward to this every year.

12. Caramel apples. Making them, eating them. Yummy.

6 small apples

1 package caramels (14 oz.)
1/2 cup chopped nuts
1) Line a cookie sheet with waxed paper. Empty nuts onto the paper and divide into six equal heaps. Leave as much space as possible between each heap.
2) Wash and dry the apples. Twist off the stems and push sticks half way onto the apples where the stems used to be.
3) Melt the caramels in the microwave or a saucepan over low heat.
4) Dip apples in the melted caramel to coat. Use a knife to help cover the whole apple.
Place each apple, stick side up, onto a heap of nuts and roll over to cover.
5) Refrigerate until the caramel is firm, about 1/2 hour.

Use a combination of different colored apples: red, green and yellow. Choose uniform-sized apples--small apples work best. Substituting chocolate caramels for traditional ones can be fun! Dip apples in one quick motion; let excess caramel drip off. Holding apple upright, press toppings into caramel to hold them in place. Use a pastry bag with a small tip and melted chocolate to make polka dots or write on your apple. Set dipped apples on wax squares or parchment paper. And remember: caramel apples are always best eaten the same day they are made! Who could wait anyway?

13. Cuddling under cozy throws & blankets on our couch with buttered popcorn and hot chocolate while watching a good movie. That is Heaven on Earth to me.
14. Sleeping on soft flannel sheets under down filled comforters.
15. Seeing the early morning frost on the yards and across the park field when we take Kipper out for his morning walk. The puffs of our warm breath in the air...
16. Chili. Hands down, it is the quintessential dish for Autumn.
Here is a "Gosh darn that's easy!" recipe! Ingredients: 1 pound lean ground beef 1 large onion, chopped 1 green bell pepper, chopped 2 tablespoons plus 2 teaspoons chili powder 1 large clove garlic, minced 1 jalapeno pepper, seeded and chopped 1 can (28 ounces) tomatoes, diced, with juices 1 can (8 ounces) tomato sauce 1/2 teaspoon ground cumin 1/2 teaspoon dried marjoram 1/4 teaspoon dried thyme 1 can (15 ounces) chili beans, small red beans, or kidney beans, drained and rinsed Preparation:Cook first 3 ingredients in a large saucepan until meat is browned, stirring until it crumbles; drain off excess fat. Add chili powder and next 8 ingredients, stirring well; bring to a boil. Cover, reduce heat, and simmer, stirring occasionally, for about 1 1/2 to 2 hours. Add beans, stirring well, and cook until thoroughly heated.
We always add more beans than required and the sorts of beans too. Ground turkey and chicken is good in this as well! Throw in some cornbread muffins slathered in butter and honey and wow. That is eatin'!

17. Hunting for the perfect pumpkin. Or, pumpkins! Going to the local farm markets which, at this time of year, usually have festivals and all sorts of fun events.
18. The smells....pumpkin pie baking, chili simmering on the stove. Wood smoke, apples, warm banana bread straight from the oven. Cinnamon, allspice, cloves and nutmeg. A golden brown turkey and sausage stuffing.
19. The sounds...the crunch of leaves under foot. The laughter of trick or treaters, wind whipping
the leaves into a frenzy. The sound the rake makes as it drags the fallen leaves into my basket.
20. Home and hearth....and all the family tucked safely inside.

Natually And Inexpensively Autumn!

Just a few ideas for a very natural and oh so inexpensive Autumn home!
Turn mini pumpkins into decorative candle holders. Just carve a hole large enough for a tea candle in the top of the pumpkin. Arrange a bunch across a mantle or down the middle of the dining table. Inexpensive and festive too! This also works well with apples of the season too! Create a no sew table runner using inexpensive appropriate for the season colors of (Oranges, browns, golds) felt, cut the material to size with a pair of pinking shears. Lay coordinating ribbons along the center of the runner and secure with double-stick tape or a dab of fabric glue, if necessary. Set a compote or cake stand in the center and scatter leaves, mini pumpkins, and pears and apples down the runner. Fill a pretty ceramic or glass bowl...or, perhaps a wicker basket with sliced and/or whole oranges & lemons, pine cones, nuts, and pieces of evergreen from your yard or local park (Around here, after the windstorm, bits of greens are in abundance). Place the container just inside the front door for a special welcome home. How good it will all smell! Cranberries would also be a lovely addition! Acorns...Fall leaves, either real or faux...let your imagination soar! Swirl a bittersweet vine around a jolly pumpkin for an instant centerpiece. Star anise and dried fruit slices, pine cones, moss, and any other pretty natural elements are also just perfect this time of year.

Pumpkin Risotto

Isn't this image a pretty one? And, I am guessing, the recipe tastes so good too. This one comes from Country Living magazine and just looked wonderful, something a little out of the ordinary but fun. Can you tell how excited I am Fall is finally here?
1 small (3-pound) sugar pumpkin 6 tablespoon(s) extra-virgin olive oil 1 tablespoon(s) finely chopped rosemary 1 teaspoon(s) finely chopped rosemary 3 teaspoon(s) sea salt .25 teaspoon(s) ground black pepper 7 cup(s) low-sodium chicken broth 1 cup(s) finely chopped yellow onion 1 tablespoon(s) finely chopped garlic 3 cup(s) Arborio rice 1 cup(s) dry white wine 2 tablespoon(s) butter 2 tablespoon(s) pumpkin butter .5 cup(s) finely shredded fontina cheese .5 cup(s) freshly grated Parmesan
DIRECTIONS Heat the oven to 400 degrees F. Cut pumpkin in half lengthwise. Trim 1/2 inch off the rounded end of each half to stand upright on cutting board. Peel the sides, cutting downward, using a sharp knife. Remove the seeds and cut into 1/2-inch pieces. Toss the pumpkin together with 2 tablespoons olive oil, 1 tablespoon rosemary, 1 teaspoon salt, and black pepper. Spread pumpkin on baking sheet. Roast, stirring twice, until very soft, 40 to 50 minutes. Let cool slightly, then transfer to a food processor and process until smooth. Bring the chicken broth to a bare simmer in a saucepan over medium-low heat to keep hot but not reduce. Heat remaining 4 tablespoons olive oil, 2 teaspoons salt, onion, and garlic in a wide, deep saucepan over medium-low heat. Cook, stirring occasionally, until soft and translucent, about 10 minutes. Stir in the rice and cook while stirring constantly, until the rice is hot — about 3 minutes. Add the wine and bring to a simmer, stirring often until almost all the wine is absorbed. Add the hot chicken broth one cup at a time, and adding more broth only when the previous addition has been absorbed. Check and adjust the heat as needed to maintain a steady simmer. Add the roasted pumpkin and continue to cook until the rice is creamy and al dente, about 10 more minutes. Remove the pan from the heat. Stir in butter, pumpkin butter, cheeses, and remaining 1 teaspoon rosemary. Pumpkin Risotto is best when served immediately.

Happy Fall Ya'll

It's here, that soft, sweet time of year that I love so very much. We begin putting our gardens to bed for their long, frosty nap and shifting our homemaking energies to creating warm & cozy interiors. This will be the week I am finally able to tend to that most enjoyable chore. Oh but I adore bringing the colors and treats of Autumn into our home. I will share some of that later this week but, for now, here are just a few photos of early Fall delights! Each weekend brings another
round of festivals and garden center open houses. The weather was warmer this weekend but still nice. Blue skies and a bright, beaming sun kept us smiling...that and the fact that my brother and sister in law finally recovered their electricity! Yes, after 7 days, the power company was able to have their area back up and running today. Whew!
So now Autumn can finally begin in earnest! Happy Fall ya'll...
