Can Soup Weather be Far Off?

It just has to get cooler here soon. The local meteorologists tell us that we are in for a welcome change Tuesday. When it gets cooler, nothing tastes quite so good as a bowl of hot, hearty and comforting soup. Rich, creamy chowder is a favorite comfort food...reassuring, full-bodied, and very delicious. And it's easier to make than a lot of cream soups because you don't have to puree anything. Easier is better right?
RECIPE INGREDIENTS:
2 tablespoons butter
1 large onion, finely chopped
1 rib celery, finely chopped
5 1/2 cups chicken stock
1 1/2 cups frozen corn kernels
1 large all-purpose potato, peeled and diced
1/2 to 3/4 teaspoon salt, to taste
1 cup heavy cream
3 tablespoons all-purpose flour
Black pepper, to taste
Fresh dill or parsley for garnish, chopped
1. Melt the butter in a large saucepan or medium soup pot. 2. Stir in the onion and celery. 3. Partially cover the pan and cook the vegetables over moderate heat for 9 to 10 minutes, stirring occasionally. 4. Add the chicken stock, corn, potato, and salt and bring the mixture to a low boil. 5. Lower the heat, cover the pot, and simmer for about 7 minutes, until the potatoes are just tender. 6. In a small bowl, whisk together the cream and flour. 7. Stir the mixture into the soup with the pepper. 8. Bring the soup back to a low boil, then reduce the heat and simmer for about 8 minutes. 9. Serve hot, garnished with herbs.

    I don't know when it will be fall here. It has been hot, muggy and in the 80s! Not very fall like at all.

  4. Soup sounds wonderful to me :) Now don't count your chickens before they hatch. We will be getting the cold weather here shortly :) I have to travel to a seminar next week and I am hoping that the weather will not be so cold :)

  6. Dear Sue, this soup sounds just what we will need in the next month or so. Today, Thanksgiving here in Canada, has dawned damp and misty, real Autumn weather, but, it is expected to go up to 30C. Unheard of!

    Thanks for your comment, I made sure to have my sound on when I came to your blog this morning, as I don't usually and I heard Nat King Cole, and his French version for the first time. We obviously like the same music.

    This sounds wonderful. I love soups all year, but especially in the Fall and Winter. I love to add a little "liquid smoke" to my corn chowder. It makes it wonderful. Have you ever tried it?

    I love corn chowder. One of the first things I made, after I bought the Elsah Landing(IL) Cookbook, many years ago, was Corn Chowder.

    We are expecting cooler temps this week. We'll be going to the lake Friday. Not many opportunities, for that, this busy fall. I plan to make soup, over the weekend. Perhaps we can sit on our deck, enjoy the lake, with a good bowl of homemade soup!

  12. Now that is my kind of soup! YUM! I love soup so much. A bowl would be perfect right now because all my windows are open and it's chilly in the house. It's suppse to warm up, so I should hut them all to trap the coolness in. :o)

    pasta e fagiola, I have a copy cat recipe from Olive Garden. My H loves it. Your corn chowder sounds delish!

  21. It's still warm here, but, at my husband's request, I'm trying out a new tortilla soup recipe tonight. We got it off a new Discovery Health Channel show called Just Cook This.

    It did just start raining, so maybe that'll cool it off some!

  25. Found the salmon and corn chowder recipe and it was in Cottage Living ( sometimes the brain still works...amazing!) and it was delicious and must be good for you, it has Omega 3s.
