Autumn Apples...So Good

What's for breakfast today? Baked apple raisin oatmeal! An Autumn breakfast...the apples of the season.
2cups chopped unpeeled apples (2 medium)
2 2/3cups old-fashioned oats
1/2cup raisins
2teaspoons ground cinnamon
1/4teaspoon salt
4cups vanilla soymilk
1/4cup real maple syrup
Additional soymilk, if desired
Chopped toasted walnuts, if desired
Heat oven to 350°F. Spray 2-quart casserole with cooking spray. In casserole, stir together apples, oats, raisins, cinnamon, salt, soymilk and syrup.
Bake uncovered 45 to 50 minutes or until most of liquid is absorbed. Pour additional soymilk over each serving; sprinkle with walnuts.

  4. Hey, here's a stupid question from your non-cooking friend in Texas; can you use regular milk instead of soy milk with this recipe? Yes, I'm serious. Can you? (I honestly cannot cook without step by step directions and instructions! lol)
